  • 2 ripe mangoes, peeled and diced
  • 1 avocado, peeled, pitted and diced
  • ½ small red onion, finely sliced
  • 1 small cucumber, halved lengthways, then sliced
  • 30 g coriander (cilantro) leaves, roughly chopped
  • 40 g crushed peanuts
