Dressing
- 3 tbsp sweet chilli sauce
- 2 tsp all-purpose soy sauce or tamari
- 2 limes, juiced
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- ½ tsp freshly grated ginger
- Sea salt flakes, to taste
- Freshly cracked black pepper, to taste
Salad
- 2 ripe mangoes, peeled and diced
- 1 avocado, peeled, pitted and diced
- ½ small red onion, finely sliced
- 1 small cucumber, halved lengthways, then sliced (unpeeled)
- 30 g coriander (cilantro) leaves, roughly chopped
- 40 g crushed peanuts
- Make the dressing: In a small bowl, whisk together the sweet chilli sauce, soy sauce or tamari, freshly squeezed lime juice, olive oil, honey or maple syrup, and freshly grated ginger until the mixture is smooth and fully combined. Season with sea salt flakes and freshly cracked black pepper to your taste preferences.
- Assemble the salad: In a shallow serving bowl, start by layering the diced mango pieces evenly, followed by the sliced cucumber, diced avocado, finely sliced red onion, and freshly chopped coriander leaves arranged in that order to create a visually appealing layered effect.
