Mayonnaise Spread

  • 1 scallion, sliced

Wrap Fillings

  • 4 (10″) flour wraps
  • 1 1/2 oz. packed baby spinach or arugula (about 1 1/2 cups), divided
  • 2 cups cooked chopped rotisserie chicken (about 8 oz.), divided
  • 4 oz. cherry tomatoes, quartered, divided
  • 4 oz. fresh mozzarella, sliced, divided

Instructions

  1. Prepare the Mayonnaise Spread: In a small bowl, thoroughly mix the mayonnaise, chopped fresh basil, chopped sun-dried tomatoes, finely grated Parmesan, chopped fresh oregano (or dried oregano), sliced scallion, and grated garlic until all ingredients are well combined.
  2. Assemble the Wraps: Lay out one flour wrap on a clean surface. Spread one-quarter of the mayonnaise mixture evenly onto the wrap, leaving a 1-inch border around the edges.
  3. Add the Fillings: Over the spread mayo mixture, add one-quarter of the baby spinach or arugula, half a cup of the cooked chopped rotisserie chicken, one ounce of quartered cherry tomatoes, and one ounce of sliced fresh mozzarella.
  4. Wrap It Up: Fold in the sides of the wrap to contain the filling, then tightly roll the bottom of the wrap away from you, keeping the sides tucked in as you roll to form a secure burrito shape. Repeat the process with the remaining ingredients for the other three wraps.
  5. Serve: Slice each wrap in half and serve immediately for a fresh, flavorful meal.
