Cheese Filling
- 4 large eggs
- 1/2 pound feta cheese, crumbled

- 4 ounces cream cheese, softened

- 3/4 cup unsalted butter, melted (for brushing dough)
- Mix filling: In a medium bowl, whisk the eggs until light and frothy. In a separate bowl, combine the crumbled feta, cottage cheese, cream cheese, and add kosher salt and black pepper to taste. Gradually blend the whisked eggs into the cheese mixture until fully combined and smooth.
- Layer phyllo: Lay one sheet of phyllo dough horizontally on a clean work surface. Brush it generously with melted butter, then add another sheet of phyllo on top and brush again. This layering helps create the signature flakiness of tiropita.
- Cut strips: Using a sharp knife, cut the layered phyllo sheets vertically into six equal strips to prepare for folding.
- Fold triangles: Place a spoonful of the cheese filling at one end of a phyllo strip. Fold the dough over the filling to form a triangle, then continue folding the strip in triangle shapes until reaching the end of the strip. Brush each folded triangle with melted butter on the outside. Repeat with remaining strips and filling.
