Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the sweet potato and kale chips.
  2. Slice Sweet Potato: Peel the sweet potato and use a mandoline to slice it very thinly, about 1/8 inch thick, to ensure crispiness.
  3. Oil and Season Sweet Potato: Place the slices in a large bowl, drizzle with olive oil, and toss to coat. Lay slices in a single layer on a baking sheet and sprinkle with a combined mixture of garlic powder, cumin, smoked paprika, chile powder, salt, and pepper.
  4. Bake Sweet Potato: Bake for 10 minutes, then flip the slices and bake for another 10-13 minutes until edges curl and become crisp. Remove and let cool; chips will crisp further as they cool.
  5. Prepare Kale: While potatoes bake, toss torn kale leaves with olive oil and salt, then spread in a single layer on another baking sheet.
  6. Bake Kale: Place kale in oven after sweet potatoes are done, baking for 5-7 minutes until golden and crispy. Remove and cool slightly.
  7. Assemble Nachos: In an oven-proof skillet or baking pan, layer half the sweet potato chips, followed by half the kale chips, and sprinkle with half the cheddar cheese. Repeat layers with remaining chips and cheese.
