  • 1 tsp. ground cumin

  • 1 tbsp. freshly chopped parsley, for garnish

Instructions

  1. Preheat the Grill: Heat your grill to high heat to ensure it’s hot enough to cook the foil packs evenly and quickly.
  2. Prepare Foil Packs: Cut 4 sheets of aluminum foil about 12 inches long each to create individual packets for grilling.
  3. Assemble Ingredients in Foil: Evenly divide the sirloin steak cubes, shrimp, corn pieces, grape tomatoes, red onion slices, lime slices, and garlic among the foil sheets. Drizzle each with olive oil, then season with Old Bay, fresh thyme, ground cumin, and freshly ground black pepper to taste.
  4. Seal the Foil Packs: Fold the foil packs crosswise over the food to cover completely, then tightly roll the top and bottom edges to seal and trap steam inside during cooking.
  5. Grill the Packs: Place the foil packets on the grill and cook for 6 to 8 minutes per side, or until the shrimp are opaque and cooked through and the steak reaches your preferred doneness.
  6. Garnish and Serve: Carefully open the foil packs to avoid steam burns, then garnish with freshly chopped parsley and serve with additional lime wedges for squeezing over the top.
