Ingredients

  • 2 (14-oz.) blocks extra-firm tofu, drained
  • 1/4 cup brine from bread and butter pickles, plus pickles for serving
  • 1/4 cup Dijon mustard
  • 1/4 cup hot sauce, plus more for serving
  • 2 tablespoons apple cider vinegar
  • 1 cup (120 g) all-purpose flour
  • 1/2 cup finely ground yellow cornmeal
  • 1 tablespoon cornstarch
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons cayenne pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • Vegetable oil, for frying (2 to 3 cups)
  • 1 garlic clove
  • 1/2 cup vegan mayonnaise
  • 2 teaspoons fresh lemon juice
  • Freshly ground black pepper
  • 4 soft hamburger buns
  • 4 green lettuce leaves

Instructions

  1. Step 1: Arrange tofu blocks in a single layer on a freezer-safe plate or in a large plastic container. Cover with plastic wrap or a lid and freeze until solid, at least 5 hours or up to 1 month.
  2. Step 2: Remove tofu from freezer and let defrost completely, about 4 hours on the counter or overnight in the refrigerator. Drain any excess water.
  3. Step 3: Line a baking sheet with paper towels and arrange tofu in a single layer. Layer additional paper towels and another baking sheet on top of tofu, then weigh down with cookbooks or cans. Let drain for at least 1 hour, changing towels as needed, or refrigerate overnight.
  4. Step 4: In a shallow bowl, whisk pickle brine, mustard, hot sauce, and vinegar together. In another shallow bowl, whisk together flour, cornmeal, cornstarch, chili powder, cayenne, onion powder, baking powder, garlic powder, and 1/2 teaspoon salt.
  5. Step 5: Cut each tofu block horizontally into 2 thinner planks to make 4 total pieces. One piece at a time, coat tofu in flour mixture, then dip into brine mixture. Repeat the flour, brine, and a final flour coating. Place coated tofu on a clean plate.
  6. Step 6: Pour vegetable oil into a large cast-iron skillet to a depth of 1/2 inch and heat over medium-high. When oil shimmers, reduce heat to medium.
  7. Step 7: Fry tofu pieces, turning once, until golden brown on both sides, about 5 minutes per side. Transfer to a paper towel–lined plate to drain excess oil.
  8. Step 8: Smash garlic clove on a cutting board with the back of a knife and season with 1/2 teaspoon salt. Continue mashing until it forms a paste. Transfer paste to a small bowl and stir in mayonnaise and lemon juice. Season with salt and freshly ground pepper as needed.
  9. Step 9: Spread garlic mayo on bottom halves of buns, then layer with lettuce, fried tofu, and pickles. Drizzle with hot sauce and close with top bun.

Tips & Variations

  • Pressing tofu thoroughly after thawing ensures it crisps well during frying.
  • For extra heat, add more cayenne or a dash of smoked paprika to the flour mixture.
  • Try swapping lettuce for crunchy cabbage slaw for added texture.
  • Use a neutral oil with a high smoke point like canola or peanut oil for frying.
  • Serve with a side of vegan ranch or ranch-flavored hot sauce for dipping.

Storage

Store leftover fried tofu and sandwich components separately in airtight containers in the refrigerator for up to 3 days. Reheat tofu gently in a skillet over medium heat to maintain crispiness. Assemble sandwiches just before serving to avoid sogginess.
