Ingredients

Scale

Main Ingredients

  • 1 pound 80/20 ground beef
  • ½ cup small diced yellow onion
  • ½ cup small diced red bell pepper
  • 1.31 ounces McCormick brand sloppy joe seasoning
  • ½ cup low-sodium beef broth
  • ¼ cup ketchup
  • 1¾ cup tomato puree
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded Colby jack cheese
  • 1 fresh french baguette (sliced and toasted)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and prepare an 8×8-inch oven-safe casserole dish for baking the dip later.
  2. Cook the ground beef: Heat a medium skillet over medium-high heat, then add the ground beef. Cook for about 5 minutes or until browned and fully cooked through. Remove the beef to a paper towel-lined plate to drain excess fat, leaving about 1 tablespoon of fat in the skillet.
  3. Sauté the vegetables: Add the diced yellow onions and red bell peppers to the skillet with the reserved fat. Sauté for approximately 5 minutes until the vegetables become tender and fragrant.
  4. Add seasoning and liquids: Stir in the sloppy joe seasoning packet, beef broth, ketchup, tomato puree, tomato paste, Worcestershire sauce, salt, and black pepper to the vegetables. Mix everything thoroughly to combine.
  5. Simmer with beef: Return the cooked ground beef to the skillet. Simmer the mixture over medium heat for 5 minutes to allow the flavors to meld together. Then remove from heat.
  6. Incorporate cheese: Stir in 1 cup of shredded Colby jack cheese into the dip mixture until melted and well combined.
  7. Assemble the dip for baking: Transfer the sloppy joe mixture to the prepared casserole dish. Sprinkle the remaining 1 cup of shredded Colby jack cheese evenly over the top.
  8. Bake the dip: Place the casserole dish in the preheated oven and bake for 20 minutes or until the cheese on top is melted, bubbly, and slightly golden.
  9. Serve: Remove the dip from the oven and allow it to cool slightly. Serve warm with sliced and toasted fresh French baguette pieces for dipping.

Notes

  • The skillet fat left after cooking the beef provides flavor for sautéing the vegetables; do not discard it all.
  • Using low-sodium beef broth helps control the overall salt content in the dip.
  • You can substitute Colby jack cheese with mild cheddar or a cheese blend of your choice for a different flavor profile.
  • To make the dip spicier, consider adding a pinch of cayenne pepper or hot sauce during the simmer step.
  • Leftover dip can be refrigerated for up to 3 days and reheated in the oven or microwave.
