Vegetables and Cheese
- 16 oz. cherry tomatoes, stemmed, washed
- 1 (4″ x 3″) block feta (about 8 oz.)
- 4 garlic cloves, finely chopped
- Fresh basil leaves, for serving (optional)
Pantry Items
- 1 (16-oz.) package gnocchi
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 3/4 teaspoon kosher salt
- 1/4 teaspoon crushed red pepper flakes
- Freshly ground black pepper, to taste
- Preheat and Prepare Ingredients: Arrange a rack in the center of your oven and preheat it to 400°F (200°C). In a 13″ x 9″ baking dish, combine the cherry tomatoes, gnocchi, finely chopped garlic, 1/4 cup of extra-virgin olive oil, kosher salt, and crushed red pepper flakes. Season everything with freshly ground black pepper according to your taste.
- Add the Feta: Nestle the block of feta into the center of the tomato and gnocchi mixture. Drizzle a little extra olive oil over the top of the feta to encourage roasting and melting.
- Roast: Place the baking dish in the oven and roast for 25 to 30 minutes, or until the feta softens and the cherry tomatoes burst, releasing their juices and forming a saucy mixture with the gnocchi.
- Broil for Finish: After roasting, remove the dish from the oven and switch the oven setting to broil. Place the dish back in on the top rack and broil for 2 to 3 minutes, watching closely, until the tomatoes and feta develop a lovely blistered, slightly charred appearance.
- Serve: Remove from the oven, then top with fresh basil leaves if desired. Combine the mixture by stirring to create a creamy feta tomato sauce that coats the gnocchi evenly. Serve immediately and enjoy.
Notes
- You can substitute regular gnocchi with gluten-free gnocchi for a gluten-free version.
- Adjust the amount of crushed red pepper flakes to control the spice level.
- If you don’t have fresh basil, baby spinach or arugula can be sprinkled on top for added freshness.
- To save time, use pre-minced garlic instead of fresh garlic cloves.
- This recipe works best with a sturdy baking dish that can tolerate high oven temperatures.
