This Campfire Caprese Brie is a delicious and easy-to-make appetizer perfect for outdoor gatherings. Finished with a drizzle of balsamic glaze and fresh basil, it pairs beautifully with sliced baguette for dipping.

Ingredients

Scale

Tomato Mixture

  • 1 1/2 cups halved cherry tomatoes
  • 3 cloves garlic, minced
  • 1/3 cup extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch of red pepper flakes

Main

  • 1 large wheel brie (about 8 ounces)
  • Balsamic glaze, for drizzling
  • 1/4 cup thinly sliced fresh basil, for garnish
  • 1 baguette, sliced, for serving

Instructions

  1. Prepare tomato mixture: In a large bowl, combine the halved cherry tomatoes and minced garlic. Toss with extra-virgin olive oil and season with kosher salt, freshly ground black pepper, and a pinch of red pepper flakes to your taste. Mix well to coat evenly.
  2. Set up brie for cooking: Place the large wheel of brie in a cast iron skillet. Spoon the prepared tomato mixture evenly over the top of the brie.
  3. Cook over campfire or grill: Position the skillet over a campfire or on a hot grill. Cook for about 20 minutes, until the brie is melted inside. To check if the brie is ready, carefully poke the sides of the wheel with a knife—the cheese should be soft and melty even if it’s not fully oozing.
  4. Finish and serve: Drizzle the melted brie and tomato mixture with balsamic glaze. Garnish with thinly sliced fresh basil leaves. Serve warm alongside sliced baguette for dipping.

Notes

  • If you don’t have a campfire or grill, you can bake the brie with the tomato mixture in a preheated oven at 350°F (175°C) for 15-20 minutes until melted.
  • For a spicier kick, increase the red pepper flakes according to your preference.
  • Use fresh ripe cherry tomatoes for best flavor and texture.
  • Ensure the skillet is well heated before adding the brie to achieve even melting.
  • Balsamic glaze can be substituted with a balsamic reduction or aged balsamic vinegar if glaze is unavailable.
