  • 1 lb. thick pork chops, cut into 1” pieces
  • 2 large carrots, peeled and cut into 1” chunks
  • 2 tbsp. water
  • 1 large daikon, peeled and cut into 1” chunks
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Step 1: Make the cucumber nước chấm by whisking together hot water, sugar, fish sauce, lime juice, cucumber, cilantro, garlic, and chili in a medium bowl. Cover and refrigerate until ready to serve.
  2. Step 2: Prepare the kebab marinade by mixing soy sauce, honey, fish sauce, and vegetable oil in a large bowl. Add pork pieces, toss to coat, cover with plastic wrap, and refrigerate for 1 to 2 hours.
