Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables and feta cheese.
  2. Arrange Vegetables: Place the cherry tomatoes, sliced red onion, and roughly chopped garlic cloves at the bottom of an oven-safe dish, spreading them evenly.
  3. Season Vegetables: Sprinkle dried rosemary, about half of the dried oregano, a pinch of red pepper flakes if using, and some fresh thyme sprigs over the vegetables. Drizzle generously with extra virgin olive oil to coat.
  4. Add Feta: Place the block of feta on top of the arranged vegetables. Season the feta with the remaining dried oregano, another pinch of red pepper flakes if desired, and any leftover fresh thyme. Drizzle more olive oil over the feta to enhance flavor and aid roasting.
  5. Bake: Bake the dish in the preheated oven for 20 to 25 minutes, or until the feta softens and the vegetables are tender and roasted. For a browned top, optionally broil for 1 to 2 minutes after baking.
