Cookie Dough:

  • 1/2 cup (1 stick) salted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Additional:

  • Melted butter or non-stick spray
  • Powdered sugar (for dusting)

Instructions

  1. In a large mixing bowl, combine the butter, light brown sugar, and granulated sugar. Beat with a hand mixer until smooth.
  2. Add the eggs and beat until fluffy.

  3. Mix in the vanilla extract, half of the flour, baking powder, and baking soda. Combine well. Add the remaining flour and mix until smooth.
  4. Preheat the waffle maker.
  5. Brush the waffle maker with melted butter or non-stick spray. Scoop dough onto the waffle iron using a medium cookie scoop. Cook for about 3 minutes.
  6. Transfer the waffle cookie to a cooling rack using two forks. Repeat for the remaining dough.
  7. Dust the waffle cookies with powdered sugar before serving.
