A creamy and refreshing Vanilla Bean Frappuccino made without ice cream, blending whole milk, ice, sugar, xanthan gum, and vanilla bean paste into a smooth, sweet beverage topped optionally with whipped cream.

Ingredients

Scale

Frappuccino Base

  • 1 cup whole milk
  • 1 cup ice
  • 2 tbsp granulated sugar (add 1/21 tbsp more if preferred sweeter)
  • 1/4 tsp xanthan gum
  • 1/2 tsp vanilla bean paste

Topping (Optional)

  • Whipped cream

Instructions

  1. Combine Ingredients: Add the whole milk, ice, granulated sugar, xanthan gum, and vanilla bean paste to a blender.
  2. Blend Until Creamy: Blend on high until the mixture becomes smooth and creamy; this can take between 60 seconds and 3 minutes depending on your blender’s power.
  3. Taste and Adjust Sweetness: Taste the frappuccino and add an additional 1/2 to 1 tablespoon of sugar if you prefer it sweeter. Blend again briefly to incorporate the extra sugar.
  4. Serve and Top: Pour the frappuccino into a glass and top with whipped cream if desired. Serve immediately and enjoy!

Notes

  • Xanthan gum helps to thicken the frappuccino, giving it a creamy texture without using ice cream.
  • Adjust sugar according to your taste preference after blending.
  • Using vanilla bean paste adds a rich vanilla flavor with visible vanilla specks.
  • This recipe can be made dairy-free by substituting whole milk with almond or oat milk.
  • For a colder frappuccino, use more ice or chill the milk before blending.
