Wrap Fillings

  • 4 store-bought or homemade lavash flatbreads
  • 1/2 lb. sliced deli turkey, divided
  • 4 roasted red peppers, cut into thin strips (about 1 cup), divided
  • 4 Persian cucumbers (or 2 English cucumbers), cut lengthwise into quarters, divided

Instructions

  1. Prepare the Goat Cheese Spread: In a medium bowl, combine the thinly sliced scallion, crumbled goat cheese, plain whole-milk Greek yogurt, and 2 teaspoons of extra-virgin olive oil. Season the mixture with kosher salt and freshly ground black pepper to taste, then mix until smooth and well blended.
  2. Make the Arugula Salad: In a large bowl, gently toss together the loosely packed arugula, coarsely chopped fresh dill, fresh lemon juice, and the remaining 1 teaspoon of extra-virgin olive oil. Mix carefully to evenly coat the greens without bruising them.
  3. Assemble the Wraps: Lay out each lavash flatbread on a clean work surface. Spread the prepared goat cheese mixture evenly over each piece of lavash, leaving about a 1-inch border around the edges to make rolling easier.
