Chicken Salad Ingredients

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, thinly sliced
  • 56 large strawberries, diced
  • 1/3 cup chopped pecans

Dressing Ingredients

  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. Prepare Ingredients: Cut and chop all the ingredients as specified, including shredding the chicken, chopping celery and green onion, dicing strawberries, and chopping pecans.
  2. Mix Dressing and Main Ingredients: In a large mixing bowl, add the shredded chicken, celery, green onion, pecans, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, black pepper, and salt. Stir well to combine and coat all ingredients evenly. Adjust the dressing consistency by adding more mayo or yogurt if desired.
  3. Add Strawberries: Gently fold in the diced strawberries. For optimal freshness, you may choose to add the strawberries just before serving if preparing ahead of time.
  4. Chill or Serve: Serve the salad immediately for best texture or chill it in the refrigerator for 10-20 minutes to allow flavors to meld before serving.

Notes

  • For extra crunch, toast the pecans lightly before adding.
  • You can substitute mayonnaise with all Greek yogurt for a lighter version.
  • Adjust sweetness by adding a touch of honey to the dressing if preferred.
  • Serve on a bed of mixed greens or in a sandwich for variety.
  • Keep strawberries separate until serving if making in advance to prevent sogginess.
