  • 1 1/2 lb sirloin, NY strip, or ribeye, cut into 1" cubes
  • 1 1/2 tsp baking soda
  • 2 tsp kosher salt, divided

Sauce

  • 1 scallion, green and white parts separated, thinly sliced
  • 1 (1") piece ginger, peeled, grated
  • 2 garlic cloves, grated
  • 6 tbsp honey
  • 2 tbsp rice wine vinegar
  • 1/4 cup reduced-sodium soy sauce

Vegetables and Serving

  • 1 large red onion, cut into 3/4" pieces
  • 1 tbsp neutral oil, plus more for grill
  • Cooked white rice, for serving
  • Toasted sesame seeds, for serving

Instructions

  1. Prepare the Marinade and Steak: In a large bowl or container with a lid, stir together chili-garlic sauce, hoisin sauce, toasted sesame oil, and 2 tablespoons soy sauce. Season the steak cubes with 1 1/2 teaspoons kosher salt and sprinkle with baking soda, tossing to coat. Transfer steak to the marinade bowl and toss again to coat evenly. Cover and refrigerate for at least 2 hours or up to overnight to tenderize and flavor the meat.
  2. Make the Sticky Sauce: In a small saucepan over medium-high heat, combine the white parts of the scallion, grated ginger, grated garlic, honey, rice wine vinegar, and the remaining 1/4 cup soy sauce. Stir occasionally and cook until the sauce thickens and reduces to a few tablespoons, about 10 minutes. Taste and add salt if needed. Let the sauce cool; if it becomes too thick, add 1 to 2 teaspoons of water and gently reheat to loosen it.
  3. Prepare Onions: In a large bowl, toss red onion pieces with 1/2 teaspoon kosher salt and drizzle with 1 tablespoon neutral oil. Toss to combine, separating onion layers so pieces are only one to two layers thick to ensure even grilling.
  4. Assemble Skewers: Alternately thread steak cubes and onion pieces onto skewers, using about 4 to 5 pieces of steak per 8-inch skewer. Make sure to distribute ingredients evenly for balanced cooking.
  5. Preheat Grill: Prepare a grill for medium heat and preheat for about 5 minutes. Alternatively, heat a grill pan over medium heat. Grease the grill grates or pan with neutral oil to prevent sticking.
  6. Grill the Skewers: Place skewers on the grill and cook, rotating each skewer 90 degrees every 2 to 3 minutes to achieve even cooking and grill marks. During the last minute, brush skewers generously with the prepared sticky sauce. Grill for a total of 8 to 10 minutes or until the steak reaches your desired level of doneness.
  7. Serve: Spread cooked white rice on a serving platter. Arrange the grilled skewers on top, brush with any remaining sauce, and garnish with the green parts of the scallion and toasted sesame seeds. Season with additional salt if needed and serve immediately.
