Chocolate Cookie Dough

- 1/2 cup (100g) packed light or dark brown sugar

- 1 teaspoon pure vanilla extract
- 1 cup (125g) all-purpose flour (spooned & leveled)

- 1 Tablespoon (15ml) milk (any kind, dairy or nondairy)

Peanut Butter Dough
- 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
- 1/2 cup (100g) packed light or dark brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg, at room temperature
- 3/4 cup (185g) creamy peanut butter
- 1 teaspoon pure vanilla extract
- 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (180g) semi-sweet chocolate chips
- Make the chocolate cookie dough: Cream 1/2 cup softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup packed brown sugar with a mixer on medium-high speed until light and fluffy, about 3 minutes. Add 1 large egg and 1 teaspoon vanilla extract and beat on high until combined. Scrape down bowl sides. In another bowl, whisk 1 cup flour, 2/3 cup cocoa powder, 1 teaspoon baking soda, and 1/8 teaspoon salt together. Slowly add dry ingredients to the wet on low speed, then beat in 1 tablespoon milk and 1 cup chocolate chips on high speed. The dough will be sticky and tacky.

On low speed, slowly mix in 1 1/4 cups flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Beat in 1 cup chocolate chips.
- Chill the doughs: Cover both doughs tightly and refrigerate for at least 3 hours or up to 3 days. Chilling is essential to prevent overspreading and makes shaping easier.
- Preheat oven and prepare baking sheets: Set oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
- Shape the cookies: Measure about 2 tablespoons (40g) of chocolate dough and roll into a ball. Measure 2 tablespoons (40g) peanut butter dough and roll into a ball. Press the two balls together and roll into one large ball. Repeat for all cookies, wiping hands as needed because chocolate dough is sticky.
- Bake: Place cookies on prepared sheets and bake for 12–14 minutes until edges are set but centers remain soft. If cookies aren’t spreading by 9 minutes, remove from oven and gently bang baking sheet on counter 2-3 times then return to oven to continue baking.
