Instructions

  1. Prepare the cabbage: Cut the cabbage into quarters. Remove and discard the core. Slice the cabbage thinly into shreds, separating the slices to ensure even cooking.
  2. Saute the garlic: Heat the olive oil in a 12 or 13-inch pan with tall sides over medium-high heat. Add the minced garlic and saute for about one minute until fragrant, being careful not to burn the garlic.
  3. Cook the cabbage: Add the sliced cabbage to the pan. If it doesn’t fit all at once, add it in batches, allowing it to wilt down before adding more. Saute the cabbage uncovered for 10 to 15 minutes, stirring every 1 to 2 minutes with tongs. Avoid constant stirring to allow caramelization and browning.
  4. Add optional flavorings: In the last one to two minutes of cooking, reduce the heat to medium-low. Stir in the unsalted butter until melted and/or add the balsamic vinegar to enhance the flavor.
  5. Season and serve: Remove the pan from heat. Season the sauteed cabbage with sea salt and black pepper to taste. Serve immediately as a delicious side dish.
