Instructions

  1. Prepare Herbs: Wash and chop fresh chives and dill carefully, ensuring they are finely chopped for even layering.
  2. Slice Radishes: Using a mandoline slicer, shave the radishes very thin. Pat them extremely dry with a clean towel or paper towels to prevent excess moisture that could make the butter watery.
  3. Soften Butter: Cube the unsalted butter and place it in a microwave-safe bowl. Microwave in short bursts of 5 seconds, checking frequently, until softened but not melted, about 25 seconds total.
  4. Mix Butter and Flavorings: Whisk softened butter with olive oil and lemon zest till well combined and smooth.
  5. Assemble Layers: In a mini loaf mold, begin layering starting with a layer of butter mixture, followed by 1½ tbsp chopped chives, ½ tbsp chopped dill, a pinch of flaky salt, and a layer of thinly sliced radishes. Repeat this layering process about seven times, or until the mold is filled.
  6. Remove Air Bubbles: Gently tap the mold on the countertop to release any trapped air bubbles for a smooth, compact terrine.
  7. Chill to Set: Refrigerate the terrine for about 2 hours or until it is completely set and firm enough to slice.
