4.9 from 104 reviews

This quick and healthy mug brownie recipe is perfect for a chocolate craving in just 3 minutes. Made with almond flour, cocoa powder, and sugar-free chocolate chips, this single-serving dessert is microwaved to perfection for a warm, fudgy treat that’s both gluten-free and low in sugar.

Ingredients

Scale

Brownie Base

  • 1 tbsp Unsalted butter
  • 1 tbsp Unsweetened almond milk (at room temperature)
  • 1/4 tsp Vanilla extract
  • 1 1/2 tbsp Dutch processed cocoa powder
  • 1 1/2 tbsp Wholesome Yum Blanched Almond Flour
  • 1 1/2 tbsp Besti Monk Fruit Allulose Blend
  • 1 pinch Sea salt

Chocolate Chips

  • 2 tbsp ChocZero Sugar-free Dark Chocolate Chips (divided)

Instructions

  1. Prepare the Butter: In a 6-ounce ramekin, melt the unsalted butter by heating it in the microwave for about 30 seconds until fully melted.
  2. Add Liquids: Stir in the almond milk and vanilla extract thoroughly to combine with the melted butter.
  3. Mix Dry Ingredients: Add the Dutch processed cocoa powder, blanched almond flour, Besti Monk Fruit Allulose Blend, and a pinch of sea salt. Mix everything well until you have a smooth batter.
  4. Incorporate Chocolate Chips: Stir in half of the dark chocolate chips into the batter, then smooth the top evenly in the ramekin.
  5. Microwave Cook: Microwave the mixture for 40 to 50 seconds. The brownie should appear slightly oily on top but not wet underneath. Insert a toothpick to check; it should come out with a bit of batter that can be pinched into a ball, indicating fudgy doneness.
  6. Add Garnish: While still hot, sprinkle the remaining chocolate chips on top. They will melt slightly, adding extra gooey chocolate flavor to your mug brownie.

Notes

  • Use a 6-ounce ramekin to ensure proper cooking and portion size.
  • Microwave ovens vary; start checking at 40 seconds to avoid overcooking.
  • The oils on top will reabsorb as the brownie cools, so don’t be alarmed if it looks oily right after cooking.
  • For a dairy-free version, replace butter with coconut oil and ensure chocolate chips are dairy-free.
  • To make it vegan, use a vegan butter substitute and plant-based milk.
