Instructions

Allow the mixture to simmer gently for 3 to 4 minutes until the tomatoes start to soften and the flavors meld together.
  4. Combine ingredients: Stir fresh baby spinach and crumbled feta cheese into the skillet. Return the seared chicken cutlets along with any accumulated juices from the plate back into the skillet. Cook everything together for 1 to 2 minutes until the spinach wilts and the chicken is heated through.
