Sun-Dried Tomato Sauce
- 5 oz. sun-dried tomatoes in oil, divided
- 2 tbsp. extra-virgin olive oil
- 3 garlic cloves, minced
- 1 tsp. kosher salt, divided
- 1 cup heavy cream
- 2 tbsp. finely chopped fresh basil leaves, plus more for serving
- 2 tsp. finely chopped fresh thyme leaves
- 1/4 tsp. crushed red pepper flakes
- 1 oz. Parmesan, finely grated (about 1/2 cup), plus more for sprinkling
Pizza
- 16 oz. store-bought or homemade pizza dough
- 2 oz. mozzarella, shredded
- 4 oz. rotisserie chicken, shredded
- 1 oz. sun-dried tomatoes, sliced into bite-sized pieces, for serving
- Preheat Oven and Prepare Tomatoes: Arrange a rack in the lower third of your oven and preheat it to 550°F. Finely chop 4 oz. of sun-dried tomatoes. Slice the remaining 1 oz. into bite-sized pieces and set aside for topping after baking.
- Cook Tomatoes and Garlic: Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat. Add the chopped sun-dried tomatoes and minced garlic, stirring frequently. Cook just until the garlic softens and the tomatoes begin to break down, about 3 minutes. Season with 1/2 teaspoon kosher salt.
- Make the Creamy Sauce: Stir in 1 cup of heavy cream, 2 tablespoons of chopped fresh basil, 2 teaspoons of chopped fresh thyme, and 1/4 teaspoon crushed red pepper flakes. Bring the mixture to a simmer. Reduce heat to medium-low if it starts boiling. Cook, stirring occasionally, until the sauce thickens and coats the back of a spoon, about 5 to 6 minutes. Remove from heat and stir in 1 oz. finely grated Parmesan until smooth. Let the sauce cool slightly.
- Prepare the Dough and Assemble Pizza: Stretch the pizza dough into a 12- to 14-inch diameter round and place it on a round pizza pan or a large baking sheet. Spread the cooled sun-dried tomato cream sauce evenly over the dough, leaving a 1/2- to 1-inch border around the edges. Sprinkle shredded mozzarella evenly over the sauce, then evenly distribute the shredded rotisserie chicken on top.
- Bake the Pizza: Bake the pizza in the preheated oven until the bottom and edges are golden brown and crispy, about 5 minutes.
- Garnish and Serve: Remove the pizza from the oven and top with the reserved sliced sun-dried tomatoes, additional fresh basil leaves, and a sprinkle of Parmesan cheese. Slice and serve immediately.
Notes
- Using a pizza stone can further enhance the crust crispiness when cooking at high temperature.
- If oven does not reach 550°F, bake at the maximum temperature available and increase cooking time slightly, watching carefully.
- For a lighter version, substitute heavy cream with half-and-half or a creamy non-dairy alternative, keeping in mind changes in richness.
- The sauce can be prepared ahead and refrigerated for up to 2 days to speed up assembly.
- Feel free to add other toppings like mushrooms or spinach for more variety.
