Instructions

  1. Prepare the skillet: Place a grate over a campfire and set a large cast-iron skillet on it to preheat slightly for cooking.
  2. Layer the nachos: Add about half of the tortilla chips into the skillet, spreading them evenly. Sprinkle with 1/2 cup of shredded Mexican cheese blend. Distribute one-third of the drained pinto beans, one-third of the drained sweet corn, and one-third of the diced green chiles evenly over the chips.
  3. Repeat layering: Add another layer by repeating the process with the remaining chips, cheese, beans, corn, and green chiles, making a total of three layers. Finish by topping with the pickled jalapeño slices.
  4. Cook the nachos: Cover the skillet loosely with aluminum foil or a lid. Place it over the campfire grate and cook for 5 to 10 minutes, or until the cheese has melted thoroughly and the ingredients are heated through.
