Crust

Cream Cheese Layer

  • 1/4 cup (28 g) confectioners’ sugar, plus 2 tbsp. divided
  • 1 tbsp. heavy cream
  • Zest of 1/2 lemon

Lemon Jell-O Layer

  • 1 (3-oz.) package lemon Jell-O
  • 3/4 cup boiling water
  • 2 ice cubes plus cold water to total 3/4 cup
  • 3 tbsp. lemon juice
  • 1/4 cup heavy cream
  • 2 to 4 drops yellow food coloring (optional)

Whipped Cream Topping

  • 1 cup heavy cream
  • 2 tbsp. confectioners’ sugar
  • Zest of remaining 1/2 lemon

Instructions

  1. Prepare the Crust: In a food processor, pulse the Lemon Oreos until they form fine crumbs. Add the melted butter and kosher salt, and pulse just until the mixture is combined. Pour this mixture into an 8″ x 8″ glass baking dish, pressing it firmly and evenly using the back of a measuring cup. Place the crust in the refrigerator to chill while preparing the next layers.
  2. Make the Cream Cheese Layer: In a medium bowl, use a handheld mixer on medium-high speed to beat the room-temperature cream cheese, 1/4 cup confectioners’ sugar, 1 tablespoon heavy cream, and lemon zest from half a lemon until the mixture is light and fluffy. Spread this cream cheese mixture evenly over the chilled crust using an offset spatula. Refrigerate again until ready for the next step.
  3. Prepare the Lemon Jell-O Layer: Dissolve the lemon Jell-O powder in 3/4 cup of boiling water in a medium heatproof bowl. Place 2 ice cubes in a measuring cup and add cold water until it reaches a total volume of 3/4 cup. Add this ice water (including the ice cubes), 3 tablespoons lemon juice, and 1/4 cup heavy cream to the dissolved gelatin mixture. Stir in yellow food coloring, if using, gradually until the desired shade is achieved. Stir the mixture gently for 1 to 2 minutes, until it slightly thickens. Pour the Jell-O mixture gently over the cream cheese layer. Refrigerate for 2 to 4 hours until the Jell-O layer is set.
  4. Make the Whipped Cream: In a medium bowl, beat the remaining 1 cup heavy cream and 2 tablespoons confectioners’ sugar using a handheld mixer on medium-high speed until stiff peaks form.
  5. Assemble the Dessert: Spread the whipped cream evenly over the set Jell-O layer. Finally, sprinkle the lemon zest from the remaining half of the lemon over the whipped cream as a garnish. Refrigerate until ready to serve.
