Honey Lime Butter

  • 1 tbsp chopped fresh oregano

  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

  1. Prepare the Grill: Preheat a gas or charcoal grill to medium-high heat, or alternatively, heat a grill pan over medium-high heat. Clean the grates thoroughly and oil them lightly to prevent sticking. Allow the grill to preheat for about 5 minutes to ensure even cooking.
  2. Grill the Corn: Place the shucked corn directly on the grill. Rotate the ears frequently to achieve an even char and caramelization on all sides. Grill for about 18 to 20 minutes until the corn is tender and has a nice smoky char.
  3. Make the Honey Lime Butter: While the corn is grilling, whisk together softened unsalted butter, finely chopped jalapeño, minced garlic, chopped fresh cilantro, honey, chopped fresh oregano, grated lime zest, fresh lime juice, kosher salt, and freshly ground black pepper in a small bowl until well combined and smooth.
  4. Butter the Corn: Transfer the hot grilled corn to a 13″-by-9″ baking dish. Spread 1 tablespoon of the honey lime butter mixture onto each ear of corn evenly. Cover the dish with foil and let it rest for 5 minutes to allow the flavors to meld and the butter to slightly melt into the corn.
