  • 1 bell pepper, seeds and ribs removed, chopped
  • 2 small zucchini (about 11 oz. total), cut into 1/2″ cubes
  • 1 beefsteak tomato, finely chopped

  • 8 cloves garlic, finely chopped, divided
  • 1 cup canned crushed tomatoes
  • Crusty sourdough bread, for serving

Instructions

  1. Prepare the eggplant: In a colander set over a large bowl, toss eggplant cubes with 1 teaspoon kosher salt. Let sit at least 30 minutes to draw out moisture, then squeeze off excess liquid and pat dry with paper towels to prevent sogginess during cooking.
  2. Cook onion and bell pepper: Heat 1 tablespoon olive oil in a large pot over medium heat. Add chopped onion and 2 cloves finely chopped garlic, season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Sauté, stirring occasionally, until onions are translucent, about 5 to 6 minutes. Add chopped bell pepper and continue cooking until softened, about 6 minutes. Transfer this mixture to a large bowl.
  3. Cook zucchini: In the same pot, heat another tablespoon of olive oil over medium heat. Add zucchini cubes, chopped rosemary, and 2 cloves finely chopped garlic. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring frequently, until zucchini softens and turns golden, approximately 8 minutes. Transfer zucchini to the bowl with the onion mixture.
  4. Cook eggplant: Again in the same pot, heat 1 tablespoon olive oil over medium heat. Add the salted eggplant cubes, fresh thyme leaves, and 2 cloves finely chopped garlic. Cook frequently stirring until eggplant is golden and translucent, about 8 minutes. Transfer to the bowl with other vegetables.
  5. Cook fresh tomatoes: Heat the last tablespoon of olive oil in the pot over medium heat. Add the finely chopped beefsteak tomato, 1 teaspoon granulated sugar, remaining 2 cloves garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir often and cook until tomatoes begin to break down and caramelize, about 6 to 8 minutes.
  6. Simmer combined ingredients: Add the canned crushed tomatoes, sliced basil leaves, and all previously cooked vegetables back into the pot. Bring mixture to a simmer, then reduce heat to medium-low. Continue simmering, stirring occasionally, until the vegetables meld together and are tender, about 8 to 10 minutes.
  7. Serve: Top with additional fresh basil leaves. Serve the ratatouille warm with crusty sourdough bread alongside for a delicious and comforting meal.
