Instructions

  1. Preheat Grill: Preheat your grill or grill pan to medium heat to ensure it’s hot enough for cooking the skewers evenly.
  2. Prepare Marinade: In a large bowl, whisk together barbecue sauce, soy sauce, rice wine vinegar, sesame oil, minced garlic, minced ginger, and honey until fully combined. Season the marinade to taste with kosher salt and crushed red pepper flakes for a subtle kick.
  3. Assemble Skewers: Thread the chicken pieces, pineapple cubes, diced green bell peppers, and diced red onion alternately onto skewers. Place the assembled skewers on a baking sheet and pour half of the marinade over them, allowing the flavors to begin soaking in.
  4. Grill Skewers: Place the skewers on the preheated grill. Brush the exposed sides with the reserved marinade. Grill for 5 minutes to sear and develop grill marks.
