Flatbreads

  • 4 store-bought pita breads or homemade flatbreads (recipe below)
  • 300 g self-raising flour, plus extra for dusting
  • 250 g Greek yoghurt (full-fat)
  • ½ tsp sea salt flakes (optional)

Mint Yoghurt Sauce

  • 250 g Greek yoghurt
  • 50 g feta, finely crumbled
  • 2 tbsp finely chopped fresh mint
  • 2 tbsp fresh lemon juice
  • ½ tsp sea salt flakes
  • ¼ tsp freshly cracked black pepper

Spiced Halloumi

  • 400 g halloumi, sliced into 2 cm (¾ inch) pieces
  • 2 tsp dried oregano (or dried thyme)
  • ¼ tsp freshly cracked black pepper
  • 1 tsp sweet paprika
  • 1 pinch chilli powder (optional)
  • 2 tbsp olive oil

Hot Honey Topping and Garnishes

  • 115 g honey
  • ½ red onion, finely sliced
  • ¼ bunch dill, leaves picked
  • ¼ bunch mint, leaves picked
  • ¼ bunch flat-leaf parsley, leaves picked
  • 60 g pomegranate seeds

Instructions

  1. Make the Homemade Flatbreads (optional): In a large mixing bowl, combine the self-raising flour, Greek yoghurt, and sea salt flakes if using. Mix with a spoon until the mixture looks like large flakes. Then knead the dough directly in the bowl with your hands for 1–2 minutes until it forms a large sticky ball, dusting your hands with extra flour if needed.
  2. Divide and Roll Out Dough: Lightly flour a clean surface, transfer the dough, and divide it into eight equal portions using a knife or bench scraper. Roll each piece into a ball, dust with flour, then roll out with a rolling pin into circular or oval shapes about 3 mm (⅛ inch) thick, rustic edges are fine.
  3. Cook Flatbreads: Heat a large non-stick frying pan over medium heat with no oil. Cook each flatbread for 2–3 minutes on each side until golden with light brown patches and slightly puffed. Set aside on a plate.
  4. Make Mint Yoghurt Sauce: In a bowl, combine Greek yoghurt, crumbled feta, finely chopped mint, fresh lemon juice, sea salt flakes, and cracked black pepper. Mix well, cover and refrigerate until ready to serve.
  5. Toss Halloumi with Spices: In a large bowl, combine halloumi slices with dried oregano, cracked black pepper, sweet paprika, chilli powder if using, and 1 tablespoon of olive oil. Toss well to coat all sides of the cheese.
  6. Cook Halloumi: Heat a frying pan over medium heat and add the remaining 1 tablespoon olive oil. Cook halloumi for about 2 minutes on each side until golden brown.
  7. Add Honey to Halloumi: Turn off the heat, add honey to the pan, and toss the halloumi gently with tongs for 1–2 minutes until well coated, the honey bubbles and thickens slightly, and the cheese softens without melting.
  8. Assemble the Flatbreads: Spread each flatbread generously with the mint yoghurt sauce. Layer on sliced red onion, the hot honey-coated halloumi, fresh dill, mint, flat-leaf parsley, and sprinkle pomegranate seeds over the top.
  9. Serve: Drizzle with any remaining hot honey from the pan and serve immediately while the halloumi is still warm for maximum flavor and texture.
