Instructions

  1. Prepare the Grill and Sauce: Heat the grill to medium-high heat. In a small bowl, whisk together the melted butter, honey, chipotle chili powder, minced garlic, and ½ teaspoon kosher salt to make the chipotle butter sauce. Set aside.
  2. Season Salmon and Vegetables: Season both sides of the salmon filets with ¾ teaspoon kosher salt. In a medium bowl, toss the chopped zucchini, summer squash, and red onion with ¼ teaspoon kosher salt to season the vegetables evenly.
  3. Assemble Foil Packets: Lay four pieces of foil measuring about 12 by 16 inches each on a flat surface. Divide the vegetable mixture equally among the center halves of each foil piece. Arrange a salmon filet next to the vegetables on each piece. Drizzle the chipotle butter sauce evenly over the salmon and vegetables, stirring the sauce if separated before drizzling. Fold and carefully seal the edges of each foil piece to create tightly sealed packets.
