Brownie Bars
- Cooking spray, for greasing the pan
- 1/2 cup (1 stick) unsalted butter
- 3 oz bittersweet chocolate
- 1 cup (200 g) sugar
- 2 large eggs
- 1/2 cup (60 g) all-purpose flour
- 1/2 tsp pure vanilla extract
- 1/4 tsp kosher salt
Filling
- 1 (2 1/4 tsp) packet gelatin
- 1 1/2 cups heavy cream, divided
- 1 cup dark or semisweet chocolate chips
- 1/2 cup (60 g) confectioners’ sugar
- 1 tsp pure vanilla extract
- 1/4 tsp kosher salt
Topping
- 1 cup heavy cream
- 1/4 cup (30 g) confectioners’ sugar
- 1 tsp pure vanilla extract
- Chocolate shavings or curls, for garnish
- Prepare the Brownie Bars: Arrange a rack in the center of the oven and preheat to 350°F. Grease an 8″ x 8″ pan with cooking spray and line it with parchment paper, leaving an overhang on two opposite sides for easy removal.
- Melt Butter and Chocolate: In a small saucepan over low heat, gently heat the butter and bittersweet chocolate together, stirring occasionally until almost melted, about 3 minutes. Remove from heat and stir until smooth. Allow to cool slightly.
- Make Brownie Batter: Add sugar to the melted butter and chocolate and stir to combine. Whisk in eggs one at a time, blending well after each addition. Mix in flour, vanilla extract, and kosher salt until the batter is smooth and free of flour streaks.
- Bake Brownies: Pour the batter into the prepared pan and bake for about 20 minutes, or until the center is slightly firm. Remove from oven and let cool completely.
- Prepare the Filling: In a small bowl, combine the gelatin packet with 1/4 cup of heavy cream and set aside to bloom.
- Heat Cream for Chocolate Chips: Place chocolate chips in a medium heatproof bowl. Microwave 3/4 cup heavy cream in 15-second increments until hot and nearly boiling, about 45 seconds total.
- Melt Chocolate Filling: Pour the hot cream over the chocolate chips and add the gelatin mixture. Let stand for 1 to 2 minutes, then stir until smooth. Allow this mixture to cool to room temperature, about 20 minutes.
- Whip Cream for Folding: In a stand mixer fitted with the whisk attachment, beat confectioners’ sugar, vanilla extract, kosher salt, and remaining 1/2 cup heavy cream on medium-high speed until stiff peaks form, approximately 2 to 3 minutes. Transfer whipped cream to a separate bowl.
- Incorporate Chocolate Filling: Beat the cooled chocolate mixture in the stand mixer until light and fluffy. Gently fold the whipped cream into the chocolate mixture until fully combined with no streaks.
- Assemble Filling Layer: Spread the chocolate mousse layer evenly over the cooled brownie base using an offset spatula. Refrigerate the bar until the chocolate layer sets, at least 30 minutes and up to 3 days.
- Prepare the Whipped Topping: Using the stand mixer fitted with the whisk attachment, beat heavy cream, confectioners’ sugar, and vanilla extract on medium-high speed until stiff peaks form, about 2 to 3 minutes.
- Top the Dessert: Spread the whipped cream topping over the set chocolate layer and refrigerate until fully set, 1 to 2 hours and up to 3 days.
- Serve: Use the parchment overhang to lift the brownies out of the pan and transfer to a cutting board. Garnish with chocolate shavings or curls, then cut into squares and serve.
Notes
- Ensure the brownie base is completely cooled before spreading the mousse to prevent melting.
- Blooming the gelatin in cream ensures the mousse sets properly.
- Use high-quality chocolate for the best rich flavor.
- Refrigerate brownies until fully set for cleaner slices.
- Store leftovers covered in the refrigerator for up to 3 days.
