Ingredients

Scale

Brownie Bars

  • Cooking spray, for greasing the pan
  • 1/2 cup (1 stick) unsalted butter
  • 3 oz bittersweet chocolate
  • 1 cup (200 g) sugar
  • 2 large eggs
  • 1/2 cup (60 g) all-purpose flour
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp kosher salt

Filling

  • 1 (2 1/4 tsp) packet gelatin
  • 1 1/2 cups heavy cream, divided
  • 1 cup dark or semisweet chocolate chips
  • 1/2 cup (60 g) confectioners’ sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp kosher salt

Topping

  • 1 cup heavy cream
  • 1/4 cup (30 g) confectioners’ sugar
  • 1 tsp pure vanilla extract
  • Chocolate shavings or curls, for garnish

Instructions

  1. Prepare the Brownie Bars: Arrange a rack in the center of the oven and preheat to 350°F. Grease an 8″ x 8″ pan with cooking spray and line it with parchment paper, leaving an overhang on two opposite sides for easy removal.
  2. Melt Butter and Chocolate: In a small saucepan over low heat, gently heat the butter and bittersweet chocolate together, stirring occasionally until almost melted, about 3 minutes. Remove from heat and stir until smooth. Allow to cool slightly.
  3. Make Brownie Batter: Add sugar to the melted butter and chocolate and stir to combine. Whisk in eggs one at a time, blending well after each addition. Mix in flour, vanilla extract, and kosher salt until the batter is smooth and free of flour streaks.
  4. Bake Brownies: Pour the batter into the prepared pan and bake for about 20 minutes, or until the center is slightly firm. Remove from oven and let cool completely.
  5. Prepare the Filling: In a small bowl, combine the gelatin packet with 1/4 cup of heavy cream and set aside to bloom.
  6. Heat Cream for Chocolate Chips: Place chocolate chips in a medium heatproof bowl. Microwave 3/4 cup heavy cream in 15-second increments until hot and nearly boiling, about 45 seconds total.
  7. Melt Chocolate Filling: Pour the hot cream over the chocolate chips and add the gelatin mixture. Let stand for 1 to 2 minutes, then stir until smooth. Allow this mixture to cool to room temperature, about 20 minutes.
  8. Whip Cream for Folding: In a stand mixer fitted with the whisk attachment, beat confectioners’ sugar, vanilla extract, kosher salt, and remaining 1/2 cup heavy cream on medium-high speed until stiff peaks form, approximately 2 to 3 minutes. Transfer whipped cream to a separate bowl.
  9. Incorporate Chocolate Filling: Beat the cooled chocolate mixture in the stand mixer until light and fluffy. Gently fold the whipped cream into the chocolate mixture until fully combined with no streaks.
  10. Assemble Filling Layer: Spread the chocolate mousse layer evenly over the cooled brownie base using an offset spatula. Refrigerate the bar until the chocolate layer sets, at least 30 minutes and up to 3 days.
  11. Prepare the Whipped Topping: Using the stand mixer fitted with the whisk attachment, beat heavy cream, confectioners’ sugar, and vanilla extract on medium-high speed until stiff peaks form, about 2 to 3 minutes.
  12. Top the Dessert: Spread the whipped cream topping over the set chocolate layer and refrigerate until fully set, 1 to 2 hours and up to 3 days.
  13. Serve: Use the parchment overhang to lift the brownies out of the pan and transfer to a cutting board. Garnish with chocolate shavings or curls, then cut into squares and serve.

Notes

  • Ensure the brownie base is completely cooled before spreading the mousse to prevent melting.
  • Blooming the gelatin in cream ensures the mousse sets properly.
  • Use high-quality chocolate for the best rich flavor.
  • Refrigerate brownies until fully set for cleaner slices.
  • Store leftovers covered in the refrigerator for up to 3 days.
