  • 1 tsp chilli flakes / red pepper flakes (adjust to your taste)
  • 3 tbsp water
  • 2 tbsp soy sauce (light or all-purpose) (Note 2)
  • 2 tbsp rice vinegar (Note 3)
  • 4 tbsp sriracha sauce (Note 4)
  • 4 tbsp brown sugar (tightly packed)
  • Rice, soba, or vermicelli noodles, to serve
  • 1 green onion, finely sliced
  • 1 tsp sesame seeds
  • Diced cucumber, julienned carrot, finely sliced red radish
  • Extra sriracha sauce, if desired

Instructions

  1. Step 1: In a small bowl, mix soy sauce, rice vinegar, sriracha, and brown sugar to make the Firecracker sauce. Set aside.
  2. Step 2: Heat oil in a large frypan over high heat. Add beef mince and cook, breaking it up with a spoon, until no longer pink, about 2½ minutes.
  3. Step 3: Add the minced garlic and chilli flakes to the beef. Cook for 1 minute, stirring frequently.
  4. Step 4: Pour in the Firecracker sauce and stir to coat the beef evenly. Cook for 5 to 7 minutes, stirring initially every minute and then more often as the sauce caramelizes and thickens.
  5. Step 5: Add 3 tablespoons of water and cook for 1 more minute to loosen the sauce and make it saucier.
  6. Step 6: Serve the spicy beef over your choice of rice or noodles. Garnish with sliced green onion, sesame seeds, and fresh vegetables. Add extra sriracha if you want more heat.
