Cream Cheese Mixture

- Prepare Cream Cheese Mixture: In a large bowl, using a handheld mixer on medium-high speed, beat the softened cream cheese, confectioners’ sugar, instant espresso powder, and 1/2 teaspoon of kosher salt until the mixture is smooth, fluffy, and the espresso powder is fully dissolved, about 2 to 3 minutes. While the mixer is running, slowly add 1 3/4 cups of the heavy cream and continue beating until everything is thoroughly incorporated and the mixture is light and airy. Refrigerate this mixture until ready to use.
- Make Chocolate Ganache: Place the dark chocolate chips in a medium heatproof bowl. In a small saucepan over medium-low heat, warm the remaining 1/2 cup of heavy cream until it just begins to simmer. Stir in the coffee liqueur, vodka, and the remaining 1/2 teaspoon of kosher salt, then return the mixture to a simmer. - Assemble the Cake Layers: Line a deep 9″ x 5″ loaf pan with plastic wrap leaving at least a 3-inch overhang on both long sides to help with removal. Transfer the remaining coffee cream mixture to an airtight container and refrigerate. Cover the loaf pan with the overhanging plastic wrap and chill the cake for at least 3 hours or up to overnight so the layers set.
- Unmold and Frost: When ready, unwrap the plastic overhang and invert the icebox cake onto a serving platter, removing the plastic wrap. Using an offset spatula, spread the reserved coffee cream mixture over the top and sides of the cake evenly. Place the cake in the freezer for about 5 minutes to allow the frosting to set slightly.
