  • 1/2 cup desiccated coconut
  • 1/4 cup unsweetened cocoa powder (Dutch Processed recommended for darker color)
  • 1/2 cup crushed peanuts (small pieces for sticking)

  • 1/4 cup icing sugar / powdered sugar

Instructions

  1. Prepare Ganache: Place the dark chocolate, cream, and unsalted butter in a microwave-safe bowl. Microwave the mixture on high power in four 30-second bursts, stirring thoroughly between each burst to ensure even melting.
  2. Melt and Smooth: After microwaving, cover the bowl with a plate and let it stand for 5 minutes. Stir the mixture until the chocolate is completely melted and the ganache is smooth and glossy.
  3. Chill Ganache: Transfer the bowl to the refrigerator and chill for 6 hours. Avoid using the freezer to speed up the process, as slow chilling ensures the right texture for rolling.
  4. Chill Tray: Place a dinner plate or tray intended for the rolled truffles into the refrigerator to chill alongside the ganache.
  5. Prepare Coatings: Place your choice of cocoa powder, desiccated coconut, crushed peanuts, sprinkles, or icing sugar into small bowls or plates for coating later.
  6. Check Ganache Firmness: Once chilled, the ganache should be firm but pliable — softer than cold butter but firmer than peanut butter, making it suitable for rolling into balls.
  7. Prepare Cooling Pack: Retrieve an ice pack or a bag of frozen peas from the freezer, place it on the working surface, and cover with a couple of paper towels. This will be used to cool your hands during rolling to prevent the truffles from melting.
