Ingredients

  • 2 (3-4 ounce) lobster tails
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup chopped shallots
  • 4 tablespoons dry sherry
  • Salt and pepper, to taste
  • 8 ounces freshly grated white cheddar
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon chopped fresh oregano, plus extra for garnish
  • 2 teaspoons Dijon mustard
  • A baguette, crackers, or your favorite veggies for dipping

Instructions

  1. Step 1: Preheat your oven to 375℉. Bring a pot of water to a boil, then add the lobster tails and boil for 5 minutes. Drain and let them cool.
  2. Step 2: Once cool enough to handle, remove the lobster meat from the tails by cutting down the back with scissors and carefully pulling the meat out. Chop the lobster meat into small pieces.
  3. Step 3: Heat a medium skillet over medium-high heat and add olive oil. Sauté the shallots and garlic for 1-2 minutes until fragrant. Add the dry sherry and cook for another 1-2 minutes until the liquid evaporates. Season with salt and pepper.
  4. Step 4: In a medium bowl, combine the chopped lobster, shallot and garlic mixture, half of the cheddar cheese, cream cheese, sour cream, parmesan, oregano, and Dijon mustard. Mix well until fully combined.
  5. Step 5: Transfer the mixture to an oven-safe 10-12 inch skillet or baking dish. Smooth out the top with a spatula and sprinkle the remaining cheddar cheese evenly over it.
  6. Step 6: Bake for 20-25 minutes, or until the cheese is golden and bubbly. Garnish with extra fresh oregano if desired. Serve warm with baguette slices, crackers, or fresh vegetables for dipping.

Tips & Variations

  • For extra richness, add a splash of heavy cream or mascarpone cheese to the mixture before baking.
  • If you don’t have dry sherry, a dry white wine or a bit of lemon juice can be a good substitute.
  • Try adding a pinch of cayenne or smoked paprika for a subtle spicy kick.
  • Fresh herbs like chives or tarragon can be used instead of oregano for a different flavor profile.

Storage

Store any leftover dip in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a small baking dish or oven-safe skillet at 350℉ until heated through and bubbly, about 10-15 minutes. Avoid microwaving for best texture.

  • 2 tablespoons grated Parmesan cheese

Flavorings

  • 1 teaspoon chopped fresh oregano, plus extra for garnish
  • 2 teaspoons Dijon mustard

Serving Suggestions

  • Baguette, crackers, or your favorite veggies for dipping

Instructions

  1. Preheat and cook lobster: Preheat your oven to 375℉ (190℃). Bring a pot of water to a rolling boil. Once boiling, add the lobster tails and boil for 5 minutes until cooked through. Drain and let cool enough to handle.
  2. Prepare lobster meat: Once cool, remove the lobster meat from the shells. Using kitchen scissors, cut down the back of the tail shells to extract the meat easily. Chop the lobster meat into small bite-sized pieces.
  3. Sauté aromatics: Heat a medium skillet over medium-high heat and add olive oil. Add the minced garlic and chopped shallots and sauté for 1-2 minutes until fragrant and softened. Pour in the dry sherry and cook for another 1-2 minutes, allowing the liquid to evaporate. Season with salt and pepper to taste.
  4. Combine dip ingredients: In a medium bowl, combine the chopped lobster meat, sautéed shallot and garlic mixture, half of the grated white cheddar, softened cream cheese, sour cream, grated Parmesan, chopped fresh oregano, and Dijon mustard. Mix thoroughly until all ingredients are evenly incorporated.
  5. Prepare for baking: Transfer the mixture to a 10–12 inch oven-safe skillet or baking dish. Use the back of a spatula to smooth the mixture evenly. Sprinkle the remaining grated white cheddar evenly over the top.
  6. Bake and garnish: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese on top is golden brown and bubbly. Remove from oven and garnish with extra chopped fresh oregano if desired.
  7. Serve: Serve the hot lobster dip with sliced baguette, crackers, or fresh vegetables for dipping and enjoy this rich, creamy appetizer.

Notes

  • Make sure not to overcook the lobster tails during boiling to keep the meat tender.
  • If dry sherry is unavailable, a splash of white wine or vermouth can be substituted.
  • For easier lobster meat removal, use kitchen scissors to cut down the shell rather than cracking it.
  • Serve the dip warm for the best creamy texture and cheesy flavor.
  • This dip can be prepared ahead of time up to step 4, then refrigerated and baked just before serving.
