Ingredients

Scale

Salad

  • 2 cups purple cabbage, shredded
  • 3 cups green cabbage, shredded
  • 2 cups Napa cabbage, thinly sliced
  • 1 ½ cups carrots, shredded
  • 4 Persian cucumbers, halved then sliced
  • 6 green onions, finely chopped
  • ½ cup cilantro, finely chopped
  • 2 tablespoons sesame seeds
  • ¼ cup peanuts, chopped (roasted and unsalted)

Dressing

  • 2 tablespoons white miso
  • 2 tablespoons rice vinegar
  • Juice of 1 large lime
  • ¼ cup light soy sauce
  • ¼ cup olive oil
  • ¼ cup toasted sesame oil
  • ¼ cup kewpie mayonnaise
  • 3 tablespoons ginger paste

Instructions

  1. Prepare the vegetables: Shred the purple and green cabbage and carrots if not pre-shredded. Thinly slice the Napa cabbage and Persian cucumbers. Finely chop the green onions, cilantro, and peanuts to have all fresh, ready ingredients.
  2. Make the dressing: In a mason jar or bowl, combine white miso, rice vinegar, lime juice, light soy sauce, olive oil, toasted sesame oil, kewpie mayonnaise, and ginger paste. Whisk vigorously until smooth and creamy.
  3. Assemble and toss the salad: In a large salad bowl, mix all the shredded and chopped vegetables and herbs. Pour the prepared miso ginger dressing over the salad and toss thoroughly to coat every ingredient evenly.
  4. Serve or enhance: Serve the salad on its own as a light, refreshing dish or add your favorite cooked protein such as chicken, salmon, steak, tofu, or shrimp for a more substantial meal.

Notes

  • You can use a pre-shredded vegetable mix to save time.
  • For extra protein, add cooked chicken, shrimp, tofu, salmon, or steak.
  • Adjust the amount of ginger paste and lime juice to suit your taste preferences.
  • Use roasted unsalted peanuts for best texture and flavor.
  • The salad is best served fresh but can be stored in an airtight container in the fridge for up to 1 day.
