  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cornstarch (AKA cornflour in the UK and Australia)
  • 1/4 teaspoon salt

Wet Ingredients:

  • 10 tablespoons unsalted butter (140 grams) (softened (1 stick plus 2 tablespoons))
  • 3/4 cup packed brown sugar (158 grams) (light or dark)
  • 1/4 cup granulated sugar (50 grams)
  • 1 large egg
  • 1 1/2 teaspoons vanilla

Additional:

  • 1 1/4 cup chocolate chips (divided)

Instructions

  1. Prepare Dry Ingredients: Whisk together the flour, cocoa, baking soda, and salt in a medium bowl. Set aside.
  2. Mix Wet Ingredients: In a large bowl, beat together the butter and sugars until fluffy.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla into the butter mixture until combined. Scrape down the sides of the bowl.
  4. Combine Dry and Wet Mixtures: Slowly mix the dry ingredients into the butter mixture on low speed until incorporated.
  5. Add Chocolate Chips: Stir in 1 cup of chocolate chips and reserve the extra 1/4 cup for later use.
  6. Chill Dough: Cover the bowl with cling film and chill in the refrigerator for at least 3 hours or up to 48.
  7. Preheat and Shape Dough: Preheat the oven to 350F degrees. Shape dough into balls and place on prepared baking sheets.
  8. Bake: Bake cookies for 11-13 minutes until just set. Let cool before serving.
