This refreshing Cucumber, Tomato & Onion Salad combines crisp vegetables with a zesty olive oil and vinegar dressing, accented by fresh herbs. It’s a simple, vibrant side dish perfect for warm weather or as a light accompaniment to any meal.

Ingredients

Scale

Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons vinegar (red wine, white wine, or rice wine)
  • 2 teaspoons kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder

Salad

  • 4 cups halved cherry tomatoes (about 1 1/2 lb.)
  • 1 English cucumber, quartered lengthwise, thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup coarsely chopped fresh herbs (such as basil, cilantro, dill, mint, and/or parsley)

Instructions

  1. Prepare the dressing: In a large bowl, whisk together the extra-virgin olive oil, vinegar, kosher salt, freshly ground black pepper, and garlic powder until well combined to create a flavorful dressing base.
  2. Combine the vegetables: Add the halved cherry tomatoes, thinly sliced cucumber, and red onion to the bowl with the dressing. Toss everything thoroughly so the vegetables are evenly coated with the dressing.
  3. Marinate the salad: Let the salad sit at room temperature for at least 15 minutes to allow the flavors to meld together. Alternatively, cover and refrigerate the salad for up to 12 hours to deepen the taste.
  4. Add fresh herbs: Just before serving, sprinkle the coarsely chopped fresh herbs such as basil, cilantro, dill, mint, and/or parsley over the salad to enhance its freshness and aroma. Toss lightly, if desired, and serve.
