Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook the fettuccine, stirring occasionally, until al dente according to package directions. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and return it to the pot.
  2. Prepare the steak: While the pasta cooks, heat the vegetable oil in a large skillet over medium-high heat. Generously season the sirloin steak with kosher salt and freshly ground black pepper. Cook the steak, turning occasionally, until an instant-read thermometer inserted into the center registers 125°F for medium-rare, about 4 minutes per side. Transfer the steak to a cutting board and let it rest for 10 minutes before thinly slicing across the grain.
  3. Make the roux: In the same skillet over medium heat, melt the unsalted butter. Add the minced garlic and cook, stirring, until softened and fragrant, about 1 to 2 minutes. Whisk in the all-purpose flour and cook, whisking constantly, until fully incorporated, about 1 minute.
  4. Prepare the cream sauce: Slowly add the whole milk to the roux, whisking to break up any lumps. Bring the mixture to a simmer and cook, stirring occasionally, until thickened, about 5 minutes. Stir in the grated Parmesan cheese and chopped fresh parsley. Season the sauce with salt and freshly ground black pepper to taste. Add the halved cherry tomatoes and cook, stirring occasionally, until they start bursting, about 4 to 5 minutes.
  5. Combine pasta and sauce: Add the cooked fettuccine and 1/4 cup of the reserved pasta water to the skillet, tossing to combine. Add more pasta water if needed to make the sauce glossy and smooth. Add the baby spinach and cook, tossing, until wilted, about 2 to 3 minutes.
  6. Serve: Top the creamy pasta with the sliced steak. Drizzle the dish with the balsamic glaze for a finishing touch. Serve immediately while hot.
