Instructions

  2. Toast spices: Stir in the grated ginger and minced garlic, cooking for about 1 minute until fragrant. Then add the ground turmeric, garam masala, chili powder, kosher salt, black pepper, ground cumin, and curry powder. Continue stirring and cooking the spices with the vegetables for 2 more minutes to fully release their flavors.
  3. Simmer lentils: Add the canned diced tomatoes, rinsed red lentils, and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer, uncovered, for 10 to 15 minutes until the lentils start to soften.
  4. Add coconut milk: Pour in the coconut milk and continue cooking the soup for an additional 12 to 18 minutes, stirring occasionally until the lentils become tender and the soup thickens. If the soup becomes too thick, add more vegetable broth to reach your desired consistency.
  5. Blend soup: Remove the pot from heat and use an immersion blender to purée the soup to your preferred texture. You can blend partially for a chunkier texture or thoroughly for a smooth and creamy consistency. Adjust the thickness by adding extra broth if needed.
  6. Finish and garnish: Stir in the lemon juice and taste the soup, adjusting salt and pepper as necessary. Ladle the soup into bowls and garnish with chopped fresh cilantro. Serve hot, optionally accompanied by rice.
