  • 2 medium russet potatoes (peeled and cut into 1/2-inch cubes)
  • 3 tablespoons fresh parsley (chopped, plus more for garnish)

  • 3 1/2 tablespoons all-purpose flour
  • 1 teaspoon salt (plus more, to taste)
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon cumin
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups low-sodium beef broth

Instructions

  1. Cook bacon: Place the chopped bacon in a large pot over medium heat and cook until crisp. Use a slotted spoon to remove the bacon pieces, then place them on paper towels to drain excess fat.
  2. Brown sausage: In the same pot, leaving a little bacon fat behind, add the sliced kielbasa sausage. Brown the sausage slices on both sides for about 3-4 minutes until nicely caramelized. Remove and set them aside with the bacon.
  3. Cook beef: Add ground beef, diced onion, and minced garlic to the pot. Cook over medium heat, breaking up the beef as it cooks, until the beef is no longer pink and the onions are softened.
  4. Season: Sprinkle in the all-purpose flour along with salt, black pepper, cumin, chili powder, and smoked paprika. Stir well and cook for about 1 minute to toast the flour and spices, enhancing their flavors.
  5. Combine ingredients: Return the cooked bacon and sausage to the pot. Add diced tomatoes with their liquid, baked beans with liquid, chopped green chiles with liquid, sweet corn kernels, and cubed potatoes. Pour in the beef broth and stir everything together thoroughly.
  6. Simmer: Bring the entire mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let the stew simmer gently for about 1 hour, stirring occasionally, until the potatoes are tender and the flavors have melded beautifully.
  7. Garnish: Remove the stew from heat and stir in the chopped fresh parsley. Allow the stew to sit for a few minutes to deepen the flavors before serving. Garnish with additional parsley as desired.
