Chicken
- 1 1/2 lb Bone-in chicken thighs or drumsticks (6 medium)

- Prepare the chicken: Pat the chicken dry with paper towels to remove excess moisture. Season both sides with 1/2 tsp sea salt and 1/2 tsp black pepper for flavor.
- Cook the mushrooms: Heat olive oil in a Dutch oven or large skillet over medium heat. Add sliced cremini mushrooms and cook for 8-10 minutes until they are tender and browned. Remove them with a slotted spoon and set aside to preserve their texture.
- Sear the chicken: In the same pan, add the chicken pieces and sear for about 5 minutes per side until golden brown. This step locks in flavor and texture. Remove the chicken and set aside.
