  • 1 Tablespoon Coconut Oil
  • 1 Onion, diced
  • 1 Tablespoon Fresh Ginger, minced
  • 4 Garlic Cloves, minced
  • 1 Red Chili, minced

Coconut Curry Sauce:

  • (2) 14-ounce cans Coconut Milk
  • 2 to 3 Tablespoons Soy Sauce
  • 3 Tablespoons Red Curry Paste
  • 1 Tablespoon Brown Sugar

Additional Ingredients:

  • 1 1/2 lbs. Chicken Breast, sliced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Cilantro, Chili Oil or Chili Crunch, Scallions, Fresh Lime
  • Steamed Rice

Instructions

  1. Saute the Aromatics: Heat a large, deep skillet over medium heat. Add coconut oil, onion, ginger, red chili, and garlic. Cook until softened.
  2. Add the Coconut Milk: Pour in coconut milk, soy sauce, salt, pepper, brown sugar, and red curry paste.
  3. Poach the Chicken: Add chicken to the simmering mixture. Let it simmer for 15-20 minutes until cooked through.
  4. Keep It Tender: Avoid over-simmering. Remove from heat when chicken is done to preserve moisture.
  5. Finish and Serve: Add lime juice, cilantro. Serve chicken over rice, drizzle with chili oil, and garnish with scallions and cilantro.

Notes

  • Adjust spice levels by increasing or decreasing the amount of red chili.
  • For a thicker sauce, simmer uncovered to reduce liquid.
  • Use full-fat coconut milk for a richer sauce.
