Ingredients

Scale

Dressing

  • 3 tbsp mayonnaise
  • 3 tbsp Greek yogurt
  • 2 tbsp red wine vinegar or fresh lemon juice
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Salad

  • 8 hard-boiled eggs, cut into 8 pieces each, plus more for garnish
  • 8 strips bacon, cooked and crumbled, plus more for garnish
  • 1 avocado, thinly sliced
  • 1/2 cup crumbled blue cheese, plus more for garnish
  • 1/2 cup cherry tomatoes, halved, plus more for garnish
  • 2 tbsp thinly sliced chives

Instructions

  1. Prepare the dressing: In a small bowl, stir together the mayonnaise, Greek yogurt, and red wine vinegar or lemon juice. Season with kosher salt and freshly ground black pepper to taste until well combined and smooth.
  2. Combine salad ingredients: In a large bowl, gently combine the hard-boiled eggs, cooked and crumbled bacon, thinly sliced avocado, crumbled blue cheese, and halved cherry tomatoes. Be careful to fold the ingredients lightly to maintain their texture.
  3. Add dressing: Fold in about half of the prepared dressing into the salad ingredients until they are lightly coated. Taste and season with additional salt and pepper if needed.
  4. Garnish and serve: Top the salad with thinly sliced chives and extra bacon, eggs, blue cheese, and cherry tomatoes for added flavor and presentation. Drizzle the remaining dressing over the top or serve it alongside for guests to add as they please.

Notes

  • Use fresh, high-quality eggs and bacon for the best flavor.
  • Adjust the amount of dressing depending on your preference for creaminess.
  • You can substitute red wine vinegar with fresh lemon juice for a brighter flavor.
  • Serve chilled or at room temperature for optimal taste.
  • This salad pairs well with crusty bread or on a bed of mixed greens for a more substantial meal.
