  • 1 lb homemade rough puff pastry or store-bought frozen & thawed puff pastry (2 sheets)

Sugar Spice Mixture

  • 1 cup (200g) granulated sugar
  • 2 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 2 teaspoons orange zest (optional)

Instructions

  1. Prepare Dough: If using homemade rough puff pastry, prepare dough through the second refrigeration stage. If using store-bought frozen puff pastry, make sure it is fully thawed before proceeding.
  2. Make Sugar Spice Mixture: In a bowl, combine granulated sugar, ground cinnamon, ground nutmeg, and ground cardamom. Evenly divide this mixture into two bowls. Stir the orange zest into one half, leaving the other half plain. The plain mixture will be used for rolling out the dough, and the orange-zest mixture will be for filling.
  3. Roll Dough with Sugar Spice Coating: Generously sprinkle the plain sugar spice mixture on a large clean surface and coat your rolling pin with it as well to prevent sticking. Take the dough from the refrigerator; if homemade, cut in half, or if using store-bought, work with one sheet at a time, keeping the other refrigerated. Roll the dough into a 10-inch square, sprinkling more of the plain sugar spice mixture as needed to avoid sticking. Trim edges to create straight sides if necessary.
  4. Add Filling and Shape Logs: Evenly sprinkle half of the orange-zested sugar spice mixture over the rolled-out dough. Use the rolling pin to press the mixture into the dough gently. Cut a small slit in the center of the bottom edge of the dough square for a visual marker. Slowly and tightly roll the left edge toward the center, then roll the right edge to the center to form a double log. Wrap the log tightly in plastic wrap or parchment paper.
  5. Repeat for Second Half: Repeat the rolling, filling, and shaping process with the second half of the dough. Save any excess sugar spice mixture for topping the cookies later. Refrigerate both wrapped logs for 30 minutes or up to 2 days for easier slicing.
  6. Preheat Oven and Prepare Baking Sheets: Heat the oven to 400°F (204°C). Line two to three baking sheets with silicone baking mats or parchment paper.
  7. Slice and Arrange Cookies: Remove the dough logs from the refrigerator and unwrap. Trim the rounded ends to create even edges. Slice each log into approximately 3/8 inch thick slices (just under 1/2 inch). If slices unravel, gently press or roll back. Place cookies 2 inches apart on prepared baking sheets and sprinkle any leftover sugar spice mixture on top.
  8. First Bake and Flip: Bake cookies for 8 to 9 minutes until they start puffing and expanding. Remove from oven and carefully flip each cookie over. If cookies lose shape, use a fork or spoon to tighten them back. Return to oven.
  9. Continue Baking: Bake for an additional 10 to 12 minutes until cookies are golden brown and crisp. For store-bought puff pastry, baking may be closer to 8 additional minutes. Watch closely and bake until golden brown.
  10. Cool and Store: Remove cookies from the oven and cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm if preferred. Store covered at room temperature for up to one week.
