Snack Mix
Syrup Coating
- ⅔ cup brown sugar
- ½ cup butter (1 stick)
- ⅓ cup corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon baking soda
Cinnamon Sugar Topping
- ½ cup granulated sugar
- 1 ½ teaspoons cinnamon
- Preheat Oven. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Prepare Cereal. Pour 5 cups of Honeycomb cereal into a large mixing bowl and set it aside to be coated with the syrup mixture later.
- Make Syrup. In a medium saucepan, combine ⅔ cup brown sugar, ½ cup butter, and ⅓ cup corn syrup. Stir constantly over medium heat until the mixture comes to a boil. Once boiling, continue cooking for 1 more minute to thicken slightly.
- Add Flavor and Leavening. Remove the saucepan from heat and stir in 1 teaspoon vanilla extract and ¼ teaspoon baking soda. The mixture will bubble up and expand, which is normal and helps create a light texture.
- Coat Cereal. Pour the warm syrup mixture over the Honeycomb cereal in the bowl. Toss gently but thoroughly to make sure every piece is evenly coated with the sticky mixture.
- Add Cinnamon Sugar. In a small bowl, sift together ½ cup granulated sugar and 1 ½ teaspoons cinnamon. Sprinkle this cinnamon sugar evenly over the coated cereal and toss again to cover all pieces uniformly.
- Bake the Snack. Transfer the coated cereal onto the prepared baking sheet, spreading it out evenly. Bake for 8 minutes at 350°F, stirring halfway through baking to ensure even crispiness and prevent burning.
- Cool and Store. Remove from oven and allow the snack to cool completely on the baking sheet. Once cooled, break into bite-sized pieces and store in an airtight container to maintain freshness and crunch.
