Instructions

  1. Preheat Oven. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Cereal. Pour 5 cups of Honeycomb cereal into a large mixing bowl and set it aside to be coated with the syrup mixture later.
  3. Make Syrup. In a medium saucepan, combine ⅔ cup brown sugar, ½ cup butter, and ⅓ cup corn syrup. Stir constantly over medium heat until the mixture comes to a boil. Once boiling, continue cooking for 1 more minute to thicken slightly.
  4. Add Flavor and Leavening. Remove the saucepan from heat and stir in 1 teaspoon vanilla extract and ¼ teaspoon baking soda. The mixture will bubble up and expand, which is normal and helps create a light texture.
  5. Coat Cereal. Pour the warm syrup mixture over the Honeycomb cereal in the bowl. Toss gently but thoroughly to make sure every piece is evenly coated with the sticky mixture.
  6. Add Cinnamon Sugar. In a small bowl, sift together ½ cup granulated sugar and 1 ½ teaspoons cinnamon. Sprinkle this cinnamon sugar evenly over the coated cereal and toss again to cover all pieces uniformly.
