Meringue Wreath
- 6 large egg whites, room temperature
- 1/4 tsp kosher salt
- 1 1/2 cups (300 g) granulated sugar
- 2 tsp cornstarch
- 1 tsp distilled white vinegar
- 1 tsp pure vanilla extract
Sugared Cranberries
- 3/4 cup (150 g) granulated sugar, divided
- 1 cup fresh or partially thawed frozen cranberries
- 2 sprigs fresh rosemary, cut into 1-inch pieces
- 1/2 cup water
Whipped Cream & Assembly
- 2 cups heavy cream
- 1 tbsp granulated sugar
- 1/2 cup four fruit preserves
- Fresh raspberries, for serving
- Pomegranate seeds, for serving
- Prepare Wreath Shape: Arrange a rack in the center of the oven and preheat to 300°F (150°C). Draw a 9-inch circle on the back side of a sheet of parchment paper and place it on a baking sheet.
- Make Meringue: In the bowl of a stand mixer fitted with the whisk attachment, beat egg whites and salt on medium-high speed until foamy, about 1 minute. Gradually add 1 1/2 cups sugar while continuing to beat until thick, glossy, and stiff peaks form, about 8 to 12 minutes. Beat in cornstarch, vinegar, and vanilla until combined.
- Form Meringue Wreath: Spoon eight 2-inch dollops of meringue around the drawn circle on the parchment, ensuring each touches adjacent ones to create a continuous wreath shape. Use the back of the spoon to form a shallow well in the center of each dollop.
- Bake Meringue: Place the meringue in the oven and immediately reduce temperature to 250°F (120°C). Bake until set but still white, approximately 1 hour and 15 minutes. Turn off the oven and allow the pavlova to cool completely inside with the oven door closed until it’s pinkish beige, crisp, and dry on the outside—this will take at least 2 hours, or up to overnight.
- Make Sugared Cranberries: In a small saucepan over medium heat, combine 1/2 cup sugar and 1/2 cup water. Stir until the sugar dissolves and the mixture starts to barely simmer, about 4 minutes. Remove from heat, stir in cranberries, and let cool.
- Add Rosemary & Dry Cranberries: Stir in rosemary sprigs. Using a slotted spoon, transfer the cranberries and rosemary onto a wire rack set over a baking sheet to drain. Let dry until sticky but no longer wet, about 30 minutes.
- Coat Cranberries in Sugar: Place the remaining 1/4 cup sugar in a shallow dish. Toss the sticky cranberries and rosemary in the sugar to coat evenly. Set aside.
- Prepare Whipped Cream: In the stand mixer bowl with the whisk attachment, beat heavy cream and 1 tablespoon sugar on medium speed until soft peaks form, approximately 2 to 3 minutes. Gently fold in the four fruit preserves with a spatula.
- Assemble Pavlova: Loosen the edges of the cooled pavlova with a butter knife and carefully slide it onto a serving platter. Spread the whipped cream mixture evenly over the wreath. Garnish with fresh raspberries, pomegranate seeds, and the sugared cranberries with rosemary to complete the festive decoration.
