Chocolate

- Whip the egg whites: In a clean, residue-free mixing bowl, beat the egg whites with cream of tartar and salt on high speed until soft peaks form, about 2 minutes. Slowly add sugar while continuing to beat until stiff, glossy peaks form, approximately 2 more minutes—being careful not to overbeat.
- Fold in the chocolate: Gently fold the melted chocolate into the meringue mixture to create swirls. Avoid fully incorporating to maintain the marbled effect. Reserve some chocolate to drizzle inside the piping bag for extra swirl patterns, if desired.
- Prepare piping bag: Fit a piping bag with an open star tip (such as Wilton 1M). Optionally drizzle leftover melted chocolate inside the bag. Fill the bag halfway with the chocolate-swirl meringue batter.
