Jam Mixture
- 1 heaping cup raspberries
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup (or honey)
Chocolate Coating
- 1 cup dark chocolate chips (or chunks)
- 1 teaspoon coconut oil (to help get the chocolate smoother for dipping)
- Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside. Ensure you have enough space available in your freezer to accommodate the baking sheet later.
- Make the raspberry chia jam: In a bowl, mash the raspberries thoroughly using a fork. Mix in the chia seeds and maple syrup (or honey) until all ingredients are well combined. Let the mixture sit for 5-10 minutes to allow it to thicken.
- Form jam clusters and freeze: Using a spoon, scoop about 2 tablespoons of the thickened chia jam and place dollops onto the prepared baking sheet. Leave about 2 inches between each dollop. Transfer the baking sheet to the freezer and freeze for at least one hour or until the jam clusters are fully solid.
- Melt the chocolate coating: In a medium-sized bowl, combine the dark chocolate chips and coconut oil. Melt them in the microwave in 30-second intervals, stirring well between each interval to prevent burning and ensure a smooth consistency.
- Dip and set the jam bites: Working quickly, dip each frozen jam cluster into the melted chocolate, coating it thoroughly. Place the coated bites back on the parchment-lined baking sheet. Optionally, sprinkle a pinch of sea salt over each bite. Return the baking sheet to the freezer and chill for at least 10 minutes or until the chocolate has set firmly.
Notes
- You can substitute maple syrup with honey for a different natural sweetener.
- Dark chocolate chips can be replaced with any high-quality chocolate of your choice.
- Make sure the jam clusters are fully frozen before dipping to prevent melting the chocolate.
- Store finished chocolate jam bites in an airtight container in the freezer for up to one week.
- Add a sprinkle of sea salt to enhance the chocolate flavor, but this is optional.
