These Chocolate Jam Bites are a delightful and healthy treat combining fresh raspberry chia jam with a rich dark chocolate coating. Perfect for a quick snack or a guilt-free dessert, they offer a fantastic balance of natural sweetness, antioxidants, and smooth chocolate indulgence.

Ingredients

Scale

Jam Mixture

  • 1 heaping cup raspberries
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup (or honey)

Chocolate Coating

  • 1 cup dark chocolate chips (or chunks)
  • 1 teaspoon coconut oil (to help get the chocolate smoother for dipping)

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside. Ensure you have enough space available in your freezer to accommodate the baking sheet later.
  2. Make the raspberry chia jam: In a bowl, mash the raspberries thoroughly using a fork. Mix in the chia seeds and maple syrup (or honey) until all ingredients are well combined. Let the mixture sit for 5-10 minutes to allow it to thicken.
  3. Form jam clusters and freeze: Using a spoon, scoop about 2 tablespoons of the thickened chia jam and place dollops onto the prepared baking sheet. Leave about 2 inches between each dollop. Transfer the baking sheet to the freezer and freeze for at least one hour or until the jam clusters are fully solid.
  4. Melt the chocolate coating: In a medium-sized bowl, combine the dark chocolate chips and coconut oil. Melt them in the microwave in 30-second intervals, stirring well between each interval to prevent burning and ensure a smooth consistency.
  5. Dip and set the jam bites: Working quickly, dip each frozen jam cluster into the melted chocolate, coating it thoroughly. Place the coated bites back on the parchment-lined baking sheet. Optionally, sprinkle a pinch of sea salt over each bite. Return the baking sheet to the freezer and chill for at least 10 minutes or until the chocolate has set firmly.

Notes

  • You can substitute maple syrup with honey for a different natural sweetener.
  • Dark chocolate chips can be replaced with any high-quality chocolate of your choice.
  • Make sure the jam clusters are fully frozen before dipping to prevent melting the chocolate.
  • Store finished chocolate jam bites in an airtight container in the freezer for up to one week.
  • Add a sprinkle of sea salt to enhance the chocolate flavor, but this is optional.
