Instructions

  1. Mix dry ingredients: In a medium bowl, combine the flour, cocoa powder, cornstarch, baking soda, baking powder, and salt. Set aside.

  3. Add egg and vanilla: Mix in the egg and vanilla extract until fully combined.

  5. Chill the dough: Refrigerate the dough for at least 1 hour and up to 3 days for a tender texture and easier handling.
  6. Preheat oven and prepare baking sheet: Preheat oven to 350°F (180°C) and line a cookie sheet with a silicone baking mat.
  7. Roll out dough: Bring the dough to room temperature to soften slightly. Divide into two equal portions and roll each between two sheets of parchment paper to about 1/4 inch thickness.
